      <image:caption>Start by peeling the potatoes and rinsing the leeks. Roughly chop both. Peel the garlic and cut it into thin slices. In a large saucepan, heat the oil and roast the leeks and garlic at low heat for approx. 10 minutes. Stir to make sure they do not char but just wilt and soften. Add the potatoes and stock and cover with a lid. Bring to a boil, then reduce heat to low and leave to simmer for about 20 minutes till potatoes are tender. Blend the soup with a handheld blender till there are no visible pieces of the veggies left. Season with pepper to taste. Depending on the content of salt in your stock, you may not need to add salt - make sure to taste the soup before you do. Serve with bread.</image:caption>

      <image:caption>In a large bowl, preferrably bowl of stand mixer, dissolve yeast in water. Add the rest of the ingredients for the dough, mix and knead by hand or machine until dough releases from the sides of the bowl/the table. Cover the bowl and leave to rise for an hour. Scrape dough out onto your flour dusted counter and make a hollow in the dough with your fingers. Place the filling in the hollow. With a table scraper, mix the filling with the dough by scraping dough from the outside and in over the filling. Keep doing until combined. For a visual tutorial on this, please watch my IG video by clicking here. With your scraper, cut pieces of the dough and lift them onto a baking tray lined with baking paper. Leave to rise, covered, for 30 minutes. Bake at 200 degrees Celsius for 25 minutes, until golden. They’re at their best on the day of baking.</image:caption>

      <image:caption>Mash the bananas with a fork. Whip them together with eggs, oil, yoghurt and honey. In an other bowl, mix the dry ingredients and add them to the wet mixture. Stir until well combined. Finalise by stirring in the blueberries. Pour the batter into a well greased mould or springform tin and bake at 180 degrees Celsius for 45 min until the top of the cake is golden and a toothpick inserted into the centre of the cake comes out clean. Please note that choosing a different mould than the one I’ve used here with a hole at the centre, might require longer baking time. Leave to cool in the mould for at least 30 min before transferring it to a cooling rack. Once cooled down, feel free to drizzle with caster sugar.</image:caption>

Spread the filling on one of the circles, add the second dough circle, spread the filling on this too and finalize with the top dough circle, leaving it without filling. At the centre of the circle, place a round cup approx. 7 cm in diameter. From this, cut the dough into 4 equal sized parts. Cut each of the four parts into four strips, leaving 16 strips. By using both hands, you lift up two strips and twist them away from each other one and a half round. Repeat with the remaining strips, giving the star 8 points. Pinch the dough ends and fold them under the star. Transfer the parchment paper to a baking sheet and bake at 200 degrees Celsius for 18-20 minutes until golden.       <image:caption>Dissolve yeast in the water by stirring. Whip in egg. Add white whole-wheat flour, oil, vanilla, sugar and salt and mix well, preferrably on a stand mixer. Add all purpose flour bit by bit, starting at low speed. Turn up the speed and let the machine knead your dough for 5-10 minutes till dough releases from sides and bottom of bowl and curls around the hook. Cover the bowl and leave to rise till the dough has doubled in size, it takes approx. 1 hour. Transfer the dough to your lightly flour coated counter top and with a table scraper or a very sharp knife, cut the dough into three equal sized pieces. Add the asparagus to your mini chopper or food processor along with parsley, lemon juice, seeds and oil and chop until you have a smooth pesto. Season with salt and pepper to taste. Spread the pesto on your pizza dough and bake according to the prescription of your dough. Mine needed 7 minutes at 250 degrees Celsius. Top the baked pizza with the tops of the asparagus, peas, pea sprouts, dill and parsley et voilà, your sesonal pizza verde is ready to be served!</image:caption>

Just before baking, boil some water and pour it into a rectangular baking pan. Place this at the bottom of your oven. Pull out your pizza peel and place a piece of parchment paper on it. Flip it and place it on top of your proofing basket. Flip the whole thing, so dough is now on the pizza peel. Gently remove the basket. Slide in the dough (with the parchment paper) onto the hot sheet pan. Let the bread bake with steam for 10 minutes.</image:caption>

      <image:caption>Add the wheat kernels and flaxseeds to a large bowl, preferably the bowl of your standmixer. Pour over the boiling water. Stir and leave to soak for approx 20 minutes, until almost all of the water has been absorbed. Stir in yoghurt, water and yeast. Keep stirring until yeast is dissolved. Notice that there’s a difference in the amount of yeast depending on your preferred method of rise. Add the two kinds of wholewheat flour along with salt and sugar and let your standmixer mix the dough at low speed. Add the all purpose flour, little by little and continue kneading at low speed for 1 minute. Gradually raise the speed to maxium and keep kneading until dough releases from sides and bottom of bowl, it takes 5-10 minutes. If you knead by hand, be sure to knead until the dough easily releases from your countertop.</image:caption>

      <image:caption>Grate the orange zest finely and squeeze the juice out of the oranges. Whip oil and the two kinds of sugar in a large bowl. Adding eggs, one at a time and whip again. I prefer letting my stand mixer do this but if you don’t have any, you can surely do it by hand. Mix the dry ingredients in an other bowl. Add the flour mixture to the large bowl in two seperate additions, alternating with the orange juice and make sure to whip well after each addition. End by stirring in the orange zest. Grease your mould well with oil and pour the batter into it. Bake at middle rack at 180 degrees Celsius for 35-40 minutes. If your mould is either bigger or smaller, you might have to adjust the baking time, a smaller one would probably need a bit longer and a larger one a bit shorter time. Sticking a toothpick into it, it should come out with a bit of dough sticking to it, not clean. Serve with extra blood oranges, and if you feel like it, make a beautiful pink icing with caster sugar and juice from a blood orange.</image:caption>

Once cooled down, roughly chop them (still with peel). Transfer to a minichopper or blender and process until smooth. Pour the blended oranges into a small saucepan along with the sugar and bring to a boil while stirring. Boil and stir until sugar has melted. Pour the sauce into a large scalded jar and cool it down in the fridge where it will last for at least a week.</image:caption>

Transfer the dough to your counter top and with a table scraper, cut the dough into three equal sized pieces. 1 large star: Roll out each of the three pieces to a thin circle and transfer one circle to a piece of parchment paper. 3 smaller stars: Cut each of the three pieces of dough into another three equal sized pieces, giving you a total of 9 circles, 3 for each star. Transfer one circle to a piece of parchment paper. Spread the filling on a circle, continue the layering process, leaving the top dough circle without filling. Place a reversed plate (large approx. 23 cm, small approx. 16 cm)on the layered dough circles to make sure your circle is beautifully round. Cut off the excess dough. At the centre of the circle, place a round cutter or cup (large approx. 7 cm, small approx. 4 cm). From this, cut the dough into 4 equal sized parts. Cut each of the four parts into four strips, leaving 16 strips. By using both hands, you lift up two strips and twist them away from each other one and a half round.
